Baking gluten free carrot cake

When you're feeling sick and under the weather, the aroma of baked goods in the oven is just what the doctor ordered. Yes, I did help in the making of this dessert. It's my favourite kind of cake. It's home made, gluten free, carrot cake. We changed some of the ingredients to suit our tastes.


Listed wet ingredients:
1. 200g finely grated carrots
2. one lemon & orange zest
3. 250ml of oil
4. four eggs
5. butter for the lining of the baking tin.
Listed dry ingredients:
1. 300 grams gluten free flour
2. 1/2 tsp baking soda
3. 1 tsp baking powder
4. 2 tsp ground cinnamon
5. 150g chopped walnuts
6. 200g sugar.
Tools: 2 bowls, whisk, spatula, baking tin, sieve, food grater, zester and of course an OVEN.
Preheat oven at 150C and cook for 1 hour 20 mins.
We didn't prepare the icing (unwanted fat & calories) but you're welcome to try the recipe found here on BBC GoodFood - (side bar - who else thinks Gordon Ramsay is scary looking?)
Needless to say, the carrot cake did not last long and now I'm feeling better. The 48 hour bug - is showing signs that it's leaving me. Yay!
Now, on to Amsterdam to celebrate Queens Day and Paris to celebrate...Paris.
