Cooking for one - quick gluten-free lunch idea

Cooking for one (ugh) so hard, but here's a fun recipe to do that will take 15 mins to whip up. I'm no masterchef in the making so trust me, this will be a breeze! Here are the ingredients:

  • small slices of chicken breast - you can pick this up at your local grocery store for a couple of quid.
  • butter lettuce
  • cherry tomatoes
  • carrots
  • red onions
  • your favourite seasoning for your chicken
  • salt
  • pepper
  • olive oil
  • balsamic vinegar
  • garlic
Prep work - (the unsatisfying part of cooking for me). It's worthwhile nonetheless to have everything ready so that cooking and putting it together goes by much faster.

Next comes heating the pan and getting the chicken cooked and flavoured. Whip out your best non-stick fry pan, heat oil and get the chicken breast on the pan. When chicken is starting to brown, you can start knocking out the seasoning for your chicken. I used the Raz el Hanout, a little salt and pepper and let it sit there on a low heat so that I can then prepare my dressing.

Dressing is simple for me, I stick to what works. I would go for the ready made dressings, but often they add more sugar in the bottles than I want to ingest. So here's my quick dressing. To your measurements, Olive oil + Balsamic vinegar (you can substitute this with white vinegar to reduce sugar amounts) + salt + pepper + finely chopped red onions. Whisk it and pour over the cold ingredients.

After prepping the cold ingredients, the seasoned chicken can be tossed together.

Ta-da! Lunch in 15 minutes.
